Apple Spice Cake
INGREDIENTS:
1 3/4 cup Flour
2 1/2 tsp. Baking Powder
1/2 tsp. Salt
1 tsp. Cinnamon
1/2 tsp. Nutmeg
1/2 cup Shortening
1 1/4 cup Brown Sugar
2 Eggs
1/2 cup Sweetened Applesauce
2/3 cup Milk
DIRECTIONS:
Sift together flour, baking powder, salt, cinnamon, and nutmeg. Cream shortening and brown sugar. Add the eggs. Add the dry ingredients all together with sweetened applesauce and milk. Bake 45 to 50 minutes at 350F in an 8" or 9" square pan.

Classic Molasses Cookies
INGREDIENTS:
1 lb. Lard melted
2 cups Molasses
2 cups Sugar (Cream together add cool lard)
2 Eggs
2 Heaping teaspoons soda, dissolved in 1/2 cup of hot water.
2 teaspoons Ginger
2 teaspoons Cinnamon
1 teaspoons Cloves
1 teaspoons Allspice
1 teaspoons Salt
8 to 10 cups Flour (Best if left overnight)
DIRECTIONS:
Mix dry ingredients into soft mixture forming a dough you can handle. Roll out on floured board cut into cookies and bake 350 degrees approximately 10 minutes.
Down East Maine Pumpkin Bread
INGREDIENTS:
2 cups Pureed Pumpkin
4 Eggs
1 cup Vegetable Oil
2/3 cup Water
3 cups White Sugar
3 1/2 cups All-Purpose Flour
2 teaspoons Baking Soda
1 1/2 teaspoons Salt
1 teaspoon ground Cinnamon
1 teaspoon ground Nutmeg
1/2 teaspoon ground Cloves
1/4 teaspoon ground Ginger
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7x3 inch loaf pans.
2. In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.
3. Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.
Rhubarb Jelly
INGREDIENTS:
2 lbs. (~8 cups) Rhubarb
7 cups Sugar
3 cups Water
1 bottle Certo
3 ½ cups Juice
DIRECTIONS:
Cut rhubarb into smaller pieces. Add water and simmer until tender. Strain follow instructions for other jellies in the certo book.
Sugar Cookies
INGREDIENTS:
1/2 cup butter or margarine
1/2 cup white sugar
2 eggs
1 tsp vanilla
2 tsp. baking powder
2 cups flour
DIRECTIONS:
Set oven to 400 F. Mix together baking powder & flour- set aside. In a large bowl, cream butter & sugar with mixer. Blend in eggs & vanilla, mix in baking powder/flour mixture one cup at a time. The dough will be stiff- mix by hand. Do not chill the dough. Bake on top rack for 6-7 minute until light brown.
Makes approx. 80 cookies
